Carob Cake by Corinne Caruana

Total time: 60 min

Ingredients

  • ½ cup all-purpose flour
  • 6 tbsp whole wheat pastry or white wheat flour
  • 3 tbsp carob powder
  • ¾ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp fine sea salt
  • ¼ tsp ground cinnamon
  • 1 medium banana mashed (about 1/3 cup)
  • ¼ cup honey
  • 1 egg
  • ½ cup milk
  • ¼ cup melted unsalted butter / rapeseed oil/ coconut oil
  • 1 tsp vanilla extract
  • Oil for greasing/ Greaseproof paper

Preparation

  1. Preheat oven to 350ºF. Lightly spray a (9-inch) baking pan with spray oil and set aside.
  2. In TM5 mixing bowl, whisk together egg, milk, butter or oil and vanilla 30 sec/ speed 3.
  3. Add banana, honey and cinnamon and mix 15 sec/ speed 4.
  4. Combine flours, carob powder, baking powder, baking soda and salt into mixing bowl and mix 40 sec/ speed 5 with aid of spatula.
  5. Check if all dry ingredients are mixed well to the egg mixture.
  6. Whisk in ½ cup hot water and mix a further 10 sec/ speed 5.
  7. Pour batter into prepared pan.
  8. Bake until toothpick inserted in the middle comes out clean, 40 to 45 minutes. Set aside to let cool for 15 minutes, then serve warm or remove from pan and let cool completely on a wire rack.

Banana Bread

Thermomix® time: 2 min

Ingredients

  • 50 g sugar Banana Bread
  • 80 g butter
  • 2 bananas
  • 3 eggs
  • 50 g milk
  • 200 g flour
  • 2 tsp baking powder
  • 1 tsp vanilla sugar
  • 1 coffee spoon bicarbonate of soda
  • Salt to taste

Preparation

  1. Pre-heat the oven to 180ºC.
  2. Pulverise sugar 15 sec/ speed 9.
  3. Add butter and melt in double boiler 1 min/ 50ºC/ speed 3.
  4. Add bananas and set 7 sec/ speed 6.
  5. Place all ingredients into mixing bowl and set 10 sec/ speed 6.
  6. Bake in a rectangular shape (type English cake), previously greased with butter and dusted with flour, for about 40 minutes.

Banana Cake with Caramel

Ingredients Banana Cake_TM Angola

  • 200 g butter
  • 200 g sugar
  • 5 eggs
  • 200 g flour
  • 1 tsp baking powder
  • Caramel to grease
  • 6 bananas
  • Cinnamon powder to taste

Preparation

  1. Pre-heat the oven to 180ºC.
  2. Beat butter with the sugar 3 min/ 60ºC/ speed 3.
  3. Add eggs and mix 10 sec/ speed 3.
  4. Add flour, baking powder and emulsify 30 sec/ speed 3.
  5. Grease the cake tin with caramel and line with bananas cut in thin slices.
  6. Pour the mixture into the tin and bake for 30 minutes. Unmold and sprinkle with cinnamon.

 

Banana Yogurt with Biscuits and Orange Juice

Thermomix® time: 16 min

Ingredients  banana-yoghurt

  • 100 g biscuits
  • 2 bananas
  • Juice of 1 orange
  • 1000 g milk
  • 1 natural yogurt

 

Preparation

  1. Place biscuits into mixing bowl and grind 15 sec/ speed 10. Remove and reserve.
  2. Place bananas, sugar and orange juice into mixing bowl and grind 5 sec/ speed 7.
  3. Cook 8 min/ Varoma/ speed 2.
  4. Remove the bowl from the base and let it cool down.
  5. Add 500 g of milk and the reserved biscuits and mix 8 Sec/ Speed 7.
  6. Add the remaining milk and the yogurt.
  7. Search for the automatic natural yogurt recipe, and pass it along every step, until you reach the programming time. Turn the button to start the preparation of your yogurt and let it cook during 8 hours.
  8. Put in fresh properly sterilised jars and set aside in the cold.
